For the jog wheel, you could look into getting a used EKS XP 5. I've heard really good things about them. But never used them myself.

I know some people making jogs have used the sensor from an old ball- mouse to get very good results - also the motor of a hard drive and belt are good for jogs but not scratching

That first link was actually where I got my inspiration for the jog wheel.
The square-wave wheel seems the most obvious way to do it, although I do have a few extra things I'd like to try out in that booth.
